Culinary director at The Stafford Collection, Ben Tish oversees the food and beverage at Norma, Northcote and The Game Bird, at the five-star Stafford Hotel London.
As well as working his Instagram game, whipping up spaghetti and turning up the heat with BBQ dishes for people to make at home, Ben’s finished a book project and put the plans in place to reopen the venues.
“I was in the middle of writing a book on Sicily, featuring recipes, notes and the food culture. I have always loved Mediterranean cooking and I’ve spent lots of time in Spain and Italy, where I have fallen in love with the cuisine.
“The attitude towards food, life and drink is different. Food is super important, it’s ingrained in the culture. “The volcanic soil, wind and moisture helps make the most wonderful veg.
The tomatoes are the biggest and best you’ve ever tasted. It’s like veg on acid.”
His passion for Sicilian cuisine can be seen in restaurant Norma, in Fitzrovia, London – and Ben has been working on the plans to reopen it, along with the other venues in the group.
“I think everyone needs to cool their jets as everything is still to be decided. With us, we plan to open the hotel in August and Norma in September and we’ll be launching At Home from August, too,” said Ben. The new delivery service will mean fans can tuck into a taste of the restaurant at home.
“We’ll feature favourites off the menus, including aubergine parmigiana, home-made focaccia, spaghetti fritters and from The Game Bird, steal and ale pudding and chicken kiev.”
